This recipe is for a parve (neather containing meat nor milk products), kosher, vegetarian onion pie. This recipe is slightly different to the type of onion pie I am used to making as the filling is dense and the pie is very filling. This pie is good to look at as well with it's criss-cross covering and a lot easier to make than some pies which require pastry to be made from scratch.
For people keeping kosher this onion pie makes a great addition to a meaty meal as it contains no milk products. Because this onion pie recipe contains no milk products it is also suitable for lactose intolerant people but check that pastry contains no dairy either. Go lightly with the salt as too much salt or soup powder can ruin this onion pie recipe.
Onion Pie Recipe Ingredients
Frozen bought puff pastry (you can always make your own if you wish but the frozen variety is perfect for this recipe)
7 onions
A little oil for frying
Salt
1 1/2 tablespoons Parve chicken flavored soup powder. If you would rather not use soup powder try adding other spices like pepper, rosemary or thyme. The onion flavor is predominant so you don't really have to add other flavors.
3 eggs
1/2 cup flour.
Method for onion pie recipe
Pre-heat your oven to 200 degrees centigrade.
Lightly grease a large square or rectangular pie dish or Pyrex.
Line the pie dish with a layer of puff pastry including the sides of the dish. If the frozen pastry is thick then roll it out a bit first to make it thinner.
Cut up your onions into medium size chunks (about 1/2 of an inch square) and fry them in a little oil until lightly browned, be careful not to overcook them.
In a bowl mix the onions, salt, soup powder, flour and eggs until they are fully combined.
Pour the filling into the lined pie dish.
To top the onion pie cut strips of the frozen puff pastry and lay them over the top of the pie in a criss-cross pattern.
Lightly brush the pastry with a beaten egg.
Put the onion pie into the oven for approximately a half an hour.
Variations to this parve onion pie recipe
Try frying a few mushrooms with the onion, or adding different herbs or spices. Slices of tomato can be placed on the pie filling before adding the top layer of pastry. This onion pie recipe could also be made using other members of the onion family like leeks, or red onions mixed with regular white onions.

Serve this parve onion pie either hot or cold with any kind of meal or as the main course. On a summers day it is a perfect meal accompanied by a fresh salad.
