Once-a-week Cooking Ideas and Recipes

I've been trying to be more efficient with prepping meals for the week but good meal ideas are hard to find.

Some really great, easy ideas are casseroles, meatloaf, lasagna, goulash, and various meals such as this. They can be stored in your freezer and taken out in the morning and will be ready to be cooked by the time you get home from work. They can also be refrozen and cooked again at a later time. Make sure you date things and throw out items that have been in the freezer too long. You would have to check the individual freezing times for different foods but I'm sure you could find that on the net.

I wrote a couple of articles about meals that are healthy, cheap and last several meals. You can add different foods to the lentil stew as well. One article is How to Eat Healthy and Cheaply and another article is Healthy and Cheap Lentil Stew Recipe.

During the summer a couple of good ideas are to make a taco salad. Just brown the hamburger with taco seasonings. Add this to lettuces, cheddar cheese, olives and use salsa or taco sauce or even some kind of salad dressing. Another idea is a cold pasta dish using penne pasta, olive oil, garlic powder, orgegano, basil, sun dried tomatoes, green, black or Greek olives, feta or Parmesan cheese.

 Roast at least two chickens on the weekend.  Debone one and save all the meat in a big container, leave it in large pieces, it'll dry out less that way.  Have a roast dinner with 1/2 of a chicken, add veggies and a light gravy.  Make a big pot of stock with the carcasses and any left over vegetables; but remove the meat from the remaining half you ate the roast from after simmering for 30 minutes.  Save that meat separate to put back in the stock once you've removed the bones and vegetables and you've got the base for a soup, a stew or a jambalaya in the week.

I have this wonderful digital rice cooker, but don't let the name fool you, it has many features and cooks more than rice.  It can steam vegetables, make porridge, soup, etc.....it keeps my kitchen cooler on hot days, it beeps to let me know when the food is ready, I can cook and have a nice organic facial steam treatment and set my hair rollers all at the same time, facials not usually recommended when cooking meat however, and do not injure yourself or let children get to close to this appliance, ( Steam is very hot, do not attempt these beauty treatments with rice cookers unless you are a professional, hot steam can cause injuries to you eyes, skin and hair.)

 So be careful when you select a cheap travel health insurance plan. If the plan does not cover what happens when you are traveling, then you might regret your stinginess.
